Reply with quote | #1 | A friend of mine mentioned this kugel that's her family's favorite. I called her today for the recipe, tried it, finished off the whole thing (with the help of my two teenage daughters) and I decided to post it here immediately! I will put it in the Cook NooK too.
1 lb bag cut frozen green beans 1 lb bag stir fry vegetables 1 T lite mayonaise 1 whole egg 1 egg white 1 minced garlic (one clove fresh or one cube frozen) salt and pepper to taste
Preheat oven to 350 degrees. Steam , boil or microwave the two bags of vegetables until tender. Combine with the rest of the ingredients. Pour into a 9x13 foil pan. Bake for 45 minutes.

Reply with quote | #2 | Thanks, Susan. This kugel was absolutely delish!! My two teenage daughters and I were actually fighting over it. I will make it again today. I only have canned green beans on hand so I will be using that. Will post results!

Reply with quote | #3 | This is really an amazing recipe. So easy and any vegetables seem to work. I used up all my 1/2 bags of frozen veggies: broccoli, spinach, cauliflower, string beans and peas and made the most tasty kugel. |
